When used in small amounts, Flaked Maize has a mild, neutral flavor and it adds a moderate sweetness when used in larger amounts. It will lighten the color and body of a beer, while preserving the alcohol content. Commonly used in British Bitters, Milds, and American Light Lager. Typical usage is 5-10% of the total grain content of a recipe, but some people use up to 40%.
