Build Overview

Hefeweizen is a yeast showcase wearing a wheat costume. The beer should pour hazy gold with a thick white cap, lead with banana and clove from fermentation, and finish soft, lightly tart, and refreshing — the malt and hops exist to give the yeast a stage.

The grist follows Bavarian tradition: a majority share of wheat malt over a Pilsner malt base. IREKS White Wheat Malt is the natural centerpiece, IREKS Pilsen Malt supplies the clean lager-grade foundation, and MCM Pale White Wheat is a strong North American alternative. IREKS Dark Wheat opens the door to a Dunkelweizen variation on the same framework.

Hopping is minimal by design. GR Hallertau, GR Tettnang, and GR Saphir all fit the style's German character — a single restrained bittering addition is traditional, with late hops kept to a whisper so the fermentation profile stays in front.

Yeast selection and handling are the recipe. AEB Fermoale Weiss delivers the classic banana-and-clove weizen expression, and Lallemand Munich Classic is a proven Bavarian-style wheat strain with a well-documented character range. Fermentation temperature steers the balance between banana esters and clove phenolics, so pick a target profile and hold it.

Brewer Notes

Fermentation temperature is the recipe knob that matters most. Cooler fermentations lean clove and spice, warmer ones push banana — decide the house profile and control for it batch to batch.

A wheat-heavy grist lauters differently than a barley one. Wheat has no husk, so rice hulls in the mash and a glucanase-style enzyme keep runoff moving on high-wheat brews.

The same bones cover the whole weizen family: swap in dark wheat for Dunkelweizen, raise the gravity for Weizenbock, or filter bright for Kristallweizen — one platform, four taps.
