AB Vickers Glucoamylase 400 - 1kg
AB Vickers Glucoamylase 400 is a GMO-free, food-grade saccharifying glucoamylase (amyloglucosidase) derived from a selected strain of Aspergillus niger — the enzyme for driving attenuation all the way down.
It clips dextrins and starch fragments into fermentable glucose, so the yeast can take the beer to a bone-dry finish. That's the tool behind brut IPA, low-carb and light beers, and squeezing more ABV out of the same grist.
Plan the final gravity accordingly — with enough contact time it is fully attenuative. Add in the mash or the fermenter per the data sheet.
Full specifications, dosing, and storage are on the TDS. Part of the AB Vickers process-aid line from Lallemand Brewing.
