AB Vickers ALDC - 1kg
AB Vickers ALDC is a liquid alpha-acetolactate decarboxylase enzyme from Lallemand Brewing that heads off diacetyl at fermentation. Added to the fermenter, it lets maturation run on schedule instead of waiting out a diacetyl rest.
During active fermentation, yeast excretes alpha-acetolactate, which slowly oxidizes to diacetyl — the buttery flavor no clean lager should carry — and then has to be reabsorbed by the yeast. ALDC decarboxylates alpha-acetolactate directly to flavorless acetoin, so the diacetyl never forms.
The payoff is biggest on lagers and cold fermentations, and in any cellar where tank turnaround is the constraint.
Full specifications, dosing, and storage are on the TDS. Part of the AB Vickers process-aid line from Lallemand Brewing.
