AEB Endozym Alphamyl SB1 - 1kg
Endozym Alphamyl SB1 is a thermostable alpha-amylase for starch liquefaction. It's the enzyme to reach for when the grist leans hard on adjuncts — rice, corn, sorghum, raw barley — and malt enzymes alone can't carry the conversion.
Alphamyl SB1 rapidly cleaves starch into shorter-chain dextrins at cereal-cooker and mash temperatures, keeping the mash fluid, driving conversion to completion, and pulling more extract out of the same grain bill. Incomplete liquefaction shows up later as starch haze and lost yield; this heads it off at the mash.
Use it on high-adjunct recipes, under-modified malt, or anywhere extract yield and mash throughput are the constraint.
Full specifications, dosing, and storage are on the TDS. Sourced from AEB's brewing enzyme line.
