AEB Endozym ALDC - 1kg
Endozym ALDC is a liquid alpha-acetolactate decarboxylase enzyme that stops diacetyl before it forms. Instead of waiting out a diacetyl rest, breweries add ALDC at fermentation and take beer to conditioning on schedule — tighter turnaround, more consistent beer, more capacity out of the same tanks.
Diacetyl forms when alpha-acetolactate leaks out of the yeast cell during fermentation and slowly converts to vicinal diketones — the buttery, butterscotch note no lager should carry. ALDC intercepts that pathway: it converts alpha-acetolactate directly to flavor-neutral acetoin and CO₂ outside the cell, so the diacetyl precursor never becomes diacetyl.
Dose at yeast pitch per the technical data sheet below. Most valuable on lagers and any fast-turn program where maturation time is the bottleneck; it also protects consistency on strains or fermentations that run diacetyl-prone.
Full specifications, dosing, and storage are on the TDS. Sourced from AEB's brewing line — food-grade, produced by Bacillus subtilis fermentation.
