Wyeast 2565 Kolsch Yeast is a classic yeast strain from a traditional brewery in Cologne. It is used to produce quick- conditioning pseudo-lager beer. It will produce some of the fruity character of an ale with a clean lager like profile. Low to No detectable levels of diacetyl. 

Recommended Styles include Kolsch, American Wheat Beer, Cream Ale, Berliner Weisse, Biere de Garde, Altbier, International Amber Lager, Fruit Beer, Wheatwine. 

Flocculation: Low

Attenuation: 73-77

Temperature: 56-70

ABV: up to 10%

Tips and Tricks: 

Ferments well at cold 55- 60F. It is a powdery strain with yeast that will remain in suspension post fermentation. It will require filtration or additional settling time to produce bright beers.
