Omega Brett Blend #3 Bring on Da Funk (OYL-212) is an 8 Strain blend which includes two Saccharomyces strains from Blend #1 for Primary Fermentation. Then it brings the funk with Brettanomyces bruxellensis, Brettanomyces lambicus, 2 more Brett strains isolated from a Colorado brewery known for its Brett beers, and finally, 2 more Brett strains from a Belgian source. This combination produces a funky, fruity, and complex beer. Brett Character will develop over time. Acid production will increase over time given exposure to oxygen.
