It originates from Scotland and is used by a large number of craft breweries. Fermoale has a high attenutation capacity and ferments significantly fast. It provides a very fruity aroma profile in beer. Fermoale is a low flocculating yeast with medium sedimentation at the end of fermentation. The fermentation time depends on the pitching rate and the fermentation temperature used.
